Berry Delicious!

 June was super-busy for my family, as we wrapped up the end of the school year.  This is usually a time of the year when we eat quick meals like quesadillas, Smart dogs, and spaghetti.  One thing we did get was plenty of red, ripe strawberries from our little strawberry patch!  If you remember from earlier posts, we had to build a cage around our ENTIRE patch because of our furry little friends the rabbits and the squirrels.  That cage still works because we got plenty of berries...enough to make a good sized batch of strawberry shortcake for dessert!  I got a good recipe off the internet (nope, I had never made it without Bisquick) and cooked my shortcakes from scratch.  They were tasty!  To make the strawberries JUST right, I cut them in half and then mixed them with a little water, sugar, and vanilla extract.  You have to let them sit like that for a while, stirring occasionally, to get a great syrup.  Take your hot little cakes and break them up a bit.  Put a few dollops of Earth Balance or other dairy-free margarine on the hot cake.  Pile on the strawberries and syrup (be kind, save some for everyone else), then I topped mine of with vanilla frosting that had been heated so that it could be drizzled.  Or you can get some soy whipped cream, but that's hard to find and kind of hard to make in a hurry.  Then eat! Enjoy!
