Spiced Banana Pancakes
1 ½ cups all-purpose flour
2 Tbsp. sugar
2 tsp. baking powder
1/8 tsp. ground cinnamon
1/8 tsp. nutmeg
1/8 tsp. ground cloves
1 Tbsp. ground Flaxseed (totally optional)
1 ¼ cups soymilk
3-4 medium bananas
Earthbalance (vegan butter, available at many grocery stores)
1. In bowl, combine dry ingredients and set aside.
2. In blender, combine milk and ½ the bananas. Mix with the dry ingredients well. Chop up the rest of the bananas and add to the mix.
3. Preheat the oven to about 190 degrees.
4. Put a little Earthbalance in the pan. Pour about ¼ cup of mixture for each pancake. Cook until bubbles form on top and then flip. Keep cooking until brown and yummy.
5. Put onto a plate that will not melt in the oven and keep adding the pancakes as you cook them. After you add the cakes, put the plate in the oven to keep them warm.
6. Eat with vegan sausage and hot coffee or juice! These pancakes are super-moist...bananas make a great substitute for eggs!
