Luck of the Irish!


















It was a great St. Patrick's day this year!  We got together with some of our omni friends to celebrate...but everyone eats vegan at our house, that's the rule.  But nobody every minds because there is always tons of great food to eat!  I made a great Irish Soda Bread...from scratch.  This impressed everyone but it was really easy because it is a quick bread.  This means it does not use yeast.  Robin Robertson has a great recipe for this in her cook book Vegan Planet.  I also made a great Irish Stew.  We still had plenty of canned veggies from our 2009 garden, including potatoes which can better than I thought that they would.  The stuff in there that looks like meat is Gardein.  If you haven't heard about Gardein, Google it.  You will be amazed.  It tastes great and will fool the most die-hard omni!  The broth is just water and two packets of vegetarian brown gravy.  It cooks up nice and thick!  My friend made a vegan shepherd's pie with Bocca crumbles, and it was super.  Throw in some Irish Beer and some Celtic music, and we had a memorable vegan St. Patty's!
